i bit the bullet
and did it... joined weight watchers
i can't make the time commitment of going to the meetings,
so i'm sticking to the online version.
i'm so overwhelmed.
on the first day, i wasted my points.
big time!
i thought a nature valley granolla bar was a good idea.
WRONG-O!
in order to stick with the program,
i'm going to talk a little bit about my journey on my blog
this will not be a weight watchers blog
but....
i know me and writing about it will help me along the way.
so today, i'm going to discuss
"what's for dinner"
balsamic chicken with mushrooms
serves 4
points+ value - 4
2 tsp vegetable oil
3 tbs balsamic vinegar
2 tsp dijon mustard
1 garlic clove, crushed
1 lb boneless chicken breasts, four 4 oz pieces

1/3 cups chicken broth
1/4 tsp dried thyme, crumbled
in a nonstick skillet, heat 1 tsp of oil
in a medium bowl, mix 2 tbs of vinegar, mustard and garlic.
add chicken and turn to coat
transfer chicken and marinade to skillet, saute chicken until
cooked though. about 3 minutes per side. transfer chicken
to a platter and keep warm.

add broth, thyme and remaining tbs vinegar. cook, stirring
occasionally, until mushroom are deep brown, about 2 minutes longer.

I need to get back on the WW wagon. I stray a lot. Maybe your posting will help me be better about sticking to it. Good luck! I did make a WW chicken recipe a few weeks ago and it was great. I'll send it your way when I find it.
ReplyDeleteYour menus sounds great! Looking forward to your posts.
GOOD LUCK!!
I agree with everything Eric @ out on a limb said! Looking forward to your posts....I could use a little inspiration right about now! Balsamic chicken with mushrooms sounds delish...Im going to try it!
ReplyDeleteGood luck! Those first few weeks are tough when you are trying to learn everything. I hope you have much success. It is a great program. I have never done it online but meetings worked for me and then I worked for them, as a receptionist. I was working to be a leader until I got preggers #4. I haven't rejoined but still do my own version here at home. I still measure a lot and keep track of points most days. I remember being shocked by how many points granola (and granola bars) has. Wowzers. Sometimes, it's worth it to splurge. I am excited for you.
