although i wish my average was closer to 2 lbs per week,
i'm pretty happy
because i'm (so far) making it through the holidays
without gaining.

here's a new favorite ww recipe.

Pork Piccata
ingredients
3 tbs all-purpose flour
1 tsp table salt, divided
1/2 tsp black pepper
1 lb uncooked lean pork tenderloin, trimmed & cut into 16 thin slices
2-1/2 tsp olive oil, divided
3/4 cups reduced sodium chicken broth
1/4 cup fresh lemon juice
2 tsp corn starch
1 tbs capers, drained
instructions
in a small bowl, combine flour, 1/2 tsp salt & 1/4 tsp pepper. sprinkle
over both sides of pork, shake off excess.
heat 2 tsp oil in large nonstick skillet over medium-high heat. add pork
(in 2 batches if necessary) and cook until just cooked through and golden,
about 1-1/2 minutes per side. set aside on a serving plate and cover to keep warm.
in a cup whisk together broth, lemon juice, cornstarch, 1/4 tsp salt and 1/8 tsp pepper
until blended. Pour into same skillet and whisk to combine with pan drippings. simmer
until slightly thickened. about 1 minute. Remove skillet from heat, stir in butter until
melted. Stir in capers and spoon over pork. serve warm.
serves 4 at 4 ww points.

Proud of you!!! Keep up the good work. I always try to stick to plan for breakfast and lunch and snack and then indulge at dinner if it's a special event. I just weighed in for December -- that is 6 months of staying within 2 lbs of my goal weight. WW works!!!! :) Merry merry, Erin!!!
