maggiano's rigatoni d...... OH YA!


have you ever tasted this pasta?
if not, you're in for quite a treat. i'm not kidding.

maggiano's rigatoni d

ingredients.
2 tbs. extra virgin olive oil
12 oz. button mushrooms (cut in have if large)
3 tbs. balsamic vinegar
1 yellow onion, chopped
2 tsp. pureed garlic (i use trader joe's frozen garlic)
salt and pepper
1 lb. chicken breast, cut into 1 to 1-1/2 in. pieces
1/2 quart chicken stock
2-4 oz. marsala wine
2 oz. white wine
1/2 quart heavy cream
1 lb. rigatoni pasta
1 tbs. fresh basil, chopped
2 tbs. garlic butter (i use whole foods kerigold garlic and herb butter)
parmesan cheese, shavings (garnish)
chopped fresh parsley (garnish)

directions.

1. heat oil in a large pan
2. caramelize onions set aside in a bowl
3. add mushrooms to pan and saute with balsamic vinegar (until soft and slightly browned)
4. add onions to mushrooms
5. season with salt and pepper
6. add garlic
7. add chicken
8. add chicken stock, 2 oz. of the marsala and white wine, cook until reduced by half
9. add cream and bring to a boil, cook until it thickens (to your personal preference)
10. turn down heat and simmer to skim away impurities
11. cook rigatoni at dente
12. add drained rigatoni to chicken mixture in pan and finish with basil, parsley, parmesan cheese, garlic butter and salt and pepper
13. add additional marsala for flavor as needed
14. place in a bowl and garnish with parmesan shavings and chopped parsley

  8. i had rigatoni D from maggianoes little italy restaurant. OMG it was soo delicious..I decided to try it after going into the restaurant for the first time AND ONE OF THE WORKERS RECOMMENDED IT TO ME. i was soo happy that i did..now thats all i order when I go there. This is sooo good!!!
